That Egg-Free Fried Rice with Steak and Sparkling Lemonade

1 to 1 ½ pounds of steak (we used flat iron)
Small package of baby carrots
3 heads of broccoli
1 ear of fresh corn
White rice, you should start with 2 cups of raw rice
¼ cup soy sauce
2 limes, 1 and ½ for the marinade and the rest for garnish
Bag of lemons in whatever quantity is the best deal to buy them in; it will be for the lemonade so anywhere from 5 to 10 lemons is fine
1 bottle of seltzer
Garlic (approx 5 cloves)
Shallots (2 large or 3 small)
Mise en place:
Marinate the steak in juice of 1 and ½ limes, 2 or 3 cloves of garlic, and a splash of oil. Take it out of the fridge a few minutes before cooking so it comes to room temperature a bit, but make sure it stays covered until ready to cook.
Cook the rice according to the package directions.
Cut broccoli into florets and steam the broccoli until al dente, approx 2 minutes in your steamer basket of already-boiling water. Remove to a bowl. Then steam the corn for approx 13 minutes in the same water. Taste to see if it’s cooked through. Give it a chance to cool, then cut the corn off the cob.
Cut carrots into match stick size.
Juice lemons. Reserve one lemon for cute garnish of glasses.
Make simple syrup for lemonade with 1 cup sugar to 1 cup water, bring to boil to dissolve the sugar, then let cool.
Refrigerate seltzer bottle until time to eat.
Mix lemons with the syrup you just made, plus many ice cubes. Set aside until ready to eat dinner!
Dice 3 cloves of garlic.
Slice scallions on the bias.
Don’t forget to cut the corn off the cob now that it’s cool.
Coat a large sauté pan with canola oil or olive oil. Add the shallots and carrots, and cook for 6 to 7 minutes, stirring frequently.
Stir in the garlic and scallions, and cook for one minute more.
Cook the beef, then set aside on a plate.
To that same pan, add the broccoli and corn.
Add the rice and stir to combine, then let sit to get a little crunchy on the bottom. Toss occasionally, but be sure to give it a chance to get a little crispy for 3 minutes and then repeat. Don’t stir too much, or it will get soggy.
Add approx ¼ cup soy sauce, and a bit more if needed. Cook for 1 to 2 minutes. Add back the beef and cook for 2 minutes more while setting the table.
Top each bowl of fried rice with a squeeze of lime juice. Add the seltzer to the lemonade at the last minute so it’s fizzy and cold. Enjoy!
