When Alison entered our lives, it was life-changing for Mark, my son with multiple severe food allergies and also life-changing for us as a family.
When Alison entered our lives, our family ate only what Mark could eat. Our diet was boring and repetitive and Mark and his twin were both underweight.
Alison entered our lives as Mark and Ben’s camp counselor. Originally, we were told that Mark could not take her cooking class because of his food allergies. Alison graciously agreed to teach several 2 week sessions of cooking lessons that included only foods that Mark could eat. We were thrilled that for once in his life, Mark was not going to be left out and disappointed. The camp cooking lessons worked out so well that we invited Alison to come teach Mark and Ben in our home. Once again, Alison went above and beyond. She used her own time to research recipes and then adapt them sometimes for several iterations until she had perfected them for us. We benefited as a family in so many ways. Now, Mark and our family had more variety in our diet. My sons began to put on needed weight. Perhaps, best of all, I am proud to say that my teenage boys know how to cook for themselves independently. Some of our favorite dishes that Alison introduced include steak made with the best marinade ever!, nut-free pesto which we use to make pesto pizza and pesto pasta, broccoli, mushroom, and asparagus risotto, roasted rainbow carrots and so many more. Mark was finally able to try Chinese food when Alison added Carrot fried jasmine rice to our repertoire.
We will always feel grateful that we crossed paths with Alison and feel lucky to have her in our lives!
